Recipe: Bacon-Weave S’mores

Anyone who only eats bacon with their eggs or beans hasn’t understood life yet. Bacon goes incredibly well with sweet things. And what is the sweet equivalent of bacon? Exactly: chocolate. No wonder, then, that bacon and chocolate are a match made in heaven. Add marshmallows and the party is complete. Proof? This recipe.

Have you ever eaten s’mores? They are the ultimate go-to dessert around the campfire, if you ask the average American or Canadian. What are they? Toasted marshmallows (that’s where the campfire comes in handy, of course), a layer of chocolate, all sandwiched between two crackers or ‘Graham cookies’.

In this recipe, the crackers are replaced with bacon. There you go: gluten-free s’mores! It looks more difficult than it is. The only thing you need to pay attention to is weaving the bacon tightly and getting it nice and crispy. You can read how to do that in these bacon tips.

How to make Bacon-Weave S’mores:

  • Preheat the oven to 200ºC and place a baking rack in a baking tray (so the fat is collected).
  • Make the ‘bacon weave’: Place three halved strips of bacon next to each other. Lift one end of the middle strip and place a fourth strip of bacon on top of the side pieces and underneath the middle strip. Place the middle strip back down.
  • Next, lift the two side strips of bacon and place a 5th strip on top of the middle piece and underneath the sides. Place the side strips back down.
  • Finally, lift the other end of the middle strip and place a sixth strip on top of the side pieces and underneath the middle strip. Repeat this to make three more weaves.
  • Sprinkle brown sugar over the bacon weaves and bake in the oven until crispy. About 25 to 35 minutes. Then place them on a paper towel-lined tray to drain the fat.
  • Skewer 3 marshmallows on each skewer and toast until the marshmallows are golden brown, about 2 to 3 minutes.
  • ‘Top’ one bacon weave with the chocolate and marshmallows and place a second bacon weave on top. As if it were a sandwich.
