‘Traditionally, Mediterranean cheeses have been made from goat’s, sheep’s or buffalo milk. Because demand for fresh cheese has increased enormously, cow’s milk is now also often used. That’s why you should always take a close look at the ingredients of fresh cheese and, if possible, choose the traditional version – it is more favorable in terms of how a dish is prepared, the authenticity of its flavor and its nutritional value,’ writes Susie.

Preparation

  • Cut the sugar snaps into diagonal strips and place them in a bowl together with the raw peas, tarragon, lemon juice and olive oil. Mix everything together and add salt to taste.
  • Place the burrata on a plate and divide it into quarters.
  • Spread the vegetable mixture over it. Let the flavors
  • infuse for 10 minutes and serve the dish.
