Recipe: Clams with garlic, lemon & parsley

José Pizarro’s book Basque features all the classics from the Spanish Basque Country. The most delicious pintxos and grilled fish, as well as these clams, which are on the table within fifteen minutes.

Clams are loved all over the world, and of course you can prepare them in many different ways. If you’re planning to cook for a group of people, choose ingredients and dishes your friends love and that are quick to prepare, so you don’t have to spend all your time in the kitchen.

You can cook some pasta to go with this for a quick lunch and add some chili for extra heat.”
How to make clams with garlic, lemon & parsley
Heat some oil in a deep, heavy-bottomed pan. Fry the garlic and lemon slices for 30 seconds, turn up the heat, add the brown clams and cover the pan. Cook for 2 to 3 minutes until all the clams have opened, shaking the pan back and forth occasionally (discard any clams that do not open).
Add the lemon juice and herbs and serve with crusty bread for dipping.
