In her new cookbook The Mediterranean Diet, olive oil expert Wilma van Grinsven-Padberg unravels the secret behind this cuisine and shares delicious recipes, such as these Greek courgette fritters with tzatziki.

How to make the courgette fritters

  • Grate the courgettes and sprinkle with some salt, mix well and leave to marinate for 5 to 6 hours. Then press the courgettes through a sieve to remove all the moisture.
  • Mix all the ingredients except the baking flour. If the mixture is too wet, add a small amount of flour
  • Shape the mixture into pancakes and roll them through the flour. Then fry them in plenty of olive oil until beautifully golden brown. Serve with tzatziki or another fresh dip.

How to make the tzatziki

  • Wash the cucumber and cut it in half. Remove the watery centre with a spoon, then grate the cucumber. Mix all the ingredients.
