Recipe: delicious baked dish with camembert

Baked dishes are the patron saints of comfort food. They’re a nostalgic feast for the taste buds and food for the soul. In the book Baked Dishes, Wim Ballieu collects 60 of his favourites. Vegetarian, with meat or fish, and above all: packed with vegetables. Anyone who thinks you can only eat baked dishes in winter is seriously mistaken (and missing out on a lot in life too). Our favourite: this incredibly delicious baked dish with camembert, portobello, leek and sourdough.

Wim: ‘As a child, I wasn’t a cheese fan. I still remember how I would tense up as a teenager when friends served a typical Flemish cheese platter when we visited them. So I had to learn to eat it. I immediately loved this warm camembert from the oven. It’s the perfect dish to quickly put in the oven when unexpected guests turn up at the door. When that happens at our home in Brussels, I put the camembert in the oven and order a loaf of sourdough bread from Renard Bakery with a courier. Laurent’s crusty bread is incredibly tasty, and I’m guaranteed to score points when I slice that delicious bread with my grandmother’s bread knife while the kitchen fills with the aromas of leek, portobellos, nuts and camembert. Add a bottle of red wine and the party can begin…’
How to make the camembert baked dish
- Preheat the oven to 180 °C.
- Place the camembert in the centre of a round baking dish. (Because some camemberts become rather runny when heated, you can leave them in their wooden box or place them in a small baking dish.)
- Remove the stems from the portobellos. Finely chop the stems.
- Drizzle 2 tablespoons of olive oil over the portobellos and season with freshly ground pepper. Place them in the baking dish around the camembert.
- Cut the leek into thin rings and fry them with the mushroom stems in a little oil. Finely chop the nuts and add them to the leek. Stuff the portobellos with the leek mixture.
- Drizzle some honey over the portobellos (or place pieces of honeycomb on top if you can find them).
- Place in the preheated oven for 15 to 20 minutes.
