Recipe: Fish Tacos for Your Friends

Mildly spicy fish, smoky mayonnaise, fresh coriander, cabbage and lime juice, all rolled up in a soft corn tortilla. Once you make these tacos, your friends will never want to eat anything else again.

Preparation
1. Mix all the ingredients for the sauce and set aside.
2. Mix the paprika, cayenne pepper, cumin, oregano and sunflower oil, and season with salt. Coat the fish with the spice mixture. Heat a grill pan or frying pan until very hot and cook the fish for approximately 2–3 minutes per side, until done.
3. Meanwhile, warm the tortillas in another pan by heating them for 10–30 seconds per side in a hot frying pan. Keep them in a dry tea towel while you warm the remaining tortillas.
4. Place the sauce, fish, tacos, tomatoes, onion, cabbage, coriander and lime on the table and let everyone make their own tacos at the table.
