How to make sea bass tartare with quark and basil

  • Season the sea bass tartare with pepper, salt, olive oil, lemon juice and zest.
  • Blend the basil, spinach and grapeseed oil in a blender for 2 minutes (4 minutes at 60 °C if using a Thermomix). Transfer to a saucepan and heat until it starts to separate. Strain through a cloth and keep chilled.
  • Mix the quark with the dashi vinegar, tomato ketchup and tomato juice. Season with pepper and salt and add 4 tablespoons of the basil oil until you have a beautifully split vinaigrette.
  • Arrange the tartare on a plate, finish with a few spoonfuls of the quark vinaigrette, a few basil leaves
    and rapeseed flowers.
