Recipe: fruit spring rolls with peanut dipping sauce

Besides roller coasters, haunted houses and Villa Volta, there is also plenty to experience at Efteling when it comes to food and drinks. That is why Efteling has now created its own Efteling Family Cookbook, full of recipes inspired by the park’s attractions. These fruit spring rolls with peanut sauce are one example, inspired by the De Zes Zwanen attraction.

How to make the fruit spring rolls

  • Start with the peanut sauce. Crush the garlic and put it in a saucepan with the peanut butter, 100 ml water, coconut milk, lime juice, ketjap manis and peanut oil. Heat over low heat, stirring, for 5 minutes, until the sauce is smooth. Taste and add a pinch of salt if needed. Leave to cool.
  • Cut the courgette, fennel bulb, cucumber and red cabbage into long, thin strips. Pick the mint leaves from the stems. Peel the kiwi and cut into thin slices. Cut the strawberries into thin slices.
  • Have a wide bowl of hot water ready. Dip 1 rice paper sheet into the hot water, let it drain briefly over the bowl and place it on a plate or board. On the top third of the sheet, arrange a beautiful row of ‘sweet’ ingredients: choose from strawberry slices, kiwi slices or edible flowers. Leave the edges of the sheet clear.
  • Place a strip of vegetable slices in the centre of the sheet: courgette, fennel, cucumber and/or red cabbage, again leaving the edges clear. Add some bean sprouts and mint to this strip.
  • Fold the bottom third of the rice paper sheet over the strip of vegetables and herbs. Fold the sides inwards and roll the spring roll tightly towards the fruit or flowers. Repeat with the remaining sheets and filling.
  • Place the spring rolls on a platter and serve with the peanut dipping sauce.
