Recipe: One-pan spaghetti carbonara by Julius Jaspers

We love cooking, but we’re less fond of the mountain of dishes. Because when we start cooking, dirty pans, spatulas and mixing bowls are unavoidable. The dishes from chef Julius Jaspers’ One-Pan Bible all come from a single pan, as you may have guessed. This spaghetti carbonara is also on the table in no time, with very little washing up afterwards.

Julius makes his carbonara with cream. “Very much not Italiano, they absolutely hate it, but I think it’s super delicious.”
How to make the spaghetti carbonara
- Fry the bacon pieces until semi-crispy in a pan with the olive oil, adding the onion and garlic halfway through. Set aside.
- Beat the eggs and yolks together with the cream and Parmesan cheese.
- Cook the linguine according to the package instructions in plenty of boiling water with a pinch of salt until al dente, drain and immediately mix with the bacon and egg mixture. Stir well and, if necessary, heat very briefly over low heat (not too high, otherwise you’ll end up with scrambled eggs).
- Season with salt and pepper.
