“My daughters don’t eat meat. Neither does my wife. However, they aren’t vegetarians, because fish and shellfish regularly feature on the table. And one of those daughters can really work with that. Last year, she cooked for us almost every day, and her repertoire is growing by the day. She isn’t fazed by crayfish either.”
How to make pasta with crayfish
- Heat the olive oil in a pan, press in the garlic and fry briefly in the oil. The garlic must not turn brown.
- Add the white wine and let it almost completely evaporate in 2–3 minutes.
- Add the halved cherry tomatoes. Fry over high heat for a few minutes until the tomatoes are soft.
- Add the pepper, salt and chili flakes to the sauce.
- Cook the pasta according to the instructions on the package.
- Add 150 milliliters of pasta water and the cream to the sauce. Let it simmer briefly and add the crayfish. Season with salt and pepper.
- Drain the pasta and mix in the sauce.
- Serve with a green salad and a glass of white wine.
