How to make Julius Jaspers’ ratatouille
- Sauté the onion and garlic in the oil until translucent, but be careful not to let them turn brown—or even worse, black.
- Add bell pepper, aubergine, peeled tomatoes, stock, thyme, rosemary and oregano, and bring to a gentle simmer.
- After about 30 minutes, add the courgette and let the vegetables stew for another 10 minutes.
- Remove the rosemary and oregano, and season with salt and pepper.
