Recipe: Roasted cauliflower with easy mole by FREDDY TRATLEHNER (a.k.a. VJEZE FUR)

There, he searches for the very best local ingredients, which he uses to make the most delicious dishes, such as this roasted cauliflower with easy mole, to complete his ultimate mission: bringing the Netherlands back to full flavour. And of course, he does so in his own unconventional and humorous way.

How to make roasted cauliflower with mole

  • Preheat the oven to 220 °C.
  • Remove the tough leaves from the cauliflower and cut out the stem with a sharp kitchen knife. Break the cauliflower in half and rub it all over with the olive oil, salt and pepper.
  • Roast the cauliflower on a baking sheet lined with parchment paper in the centre of the oven for 50–60 minutes, until golden brown and tender.
  • Meanwhile, heat the sunflower oil in a frying pan over medium-high heat and sauté the jalapeño pepper, garlic, onion and almonds for a few minutes. Purée them with the remaining ingredients in a blender or food processor until smooth.
  • Remove the cauliflower from the oven and let it rest for 5 minutes. Drizzle with the lime juice and sprinkle with the zest and coriander. Serve with the mole.
