Recipe: Romaine with green goddess dressing

South African cuisine encompasses so much more than just the universally known braai, and South African-born chef Duncan Welgemoed knows better than anyone how to showcase that. He is truly one of Australia’s most talented chefs. His restaurant Africola was awarded the prize for best restaurant in South Australia within a year of opening. And recently, the Africola cookbook was also published, featuring the best-kept recipes from the Africola kitchen, such as this romaine lettuce with green goddess dressing.

How to make romaine with green goddess dressing
- Blend or purée the avocado, mayonnaise, chervil, chives, shallot, 60 ml water and olive oil in a blender or with a stick blender until smooth. Taste and season.
- Cut the heads in half lengthwise, place them on a plate and drizzle with the dressing. Sprinkle the extra chervil leaves over the top.
