Recipe: vegan banana bread

In ‘Deliciously Ella The Plant-Based Cookbook’, hugely popular food blogger Ella Mills shares 100 vegetarian and vegan recipes from her Deli in London. Ideal for anyone who wants to eat plant-based (more often), but doesn’t feel like spending hours in the kitchen.

Ella: ‘This banana bread is a real favourite with us and our customers. It is soft and sweet and packed with flavour from the cinnamon, almonds and bananas. You can make it even more delicious by adding some dark chocolate chips to the batter. It tastes wonderful with a spoonful of our Apple Compote with Raspberries, a spoonful of coconut yoghurt and a drizzle of maple syrup.’

Preparation

  1. Preheat the oven to 190 °C (fan oven 170 °C). Line the loaf tin with baking paper.
  2. Mash the bananas in a large mixing bowl with a fork until smooth and creamy – the riper they are, the easier this is. Stir the dry ingredients thoroughly into the banana. Add the wet ingredients and stir everything into a smooth batter.
  3. Spoon the batter into the lined loaf tin and sprinkle evenly with the halved pecans. Bake the loaf for 45–50 minutes or until a knife inserted into the centre comes out clean; otherwise, leave the loaf in the oven for a little longer.
  4. Remove it from the oven, leave it to set in the tin for 10 minutes, then turn it out onto a wire rack to cool to room temperature.
