Recipe: vegetarian fried rice

All you need for this dish is some leftover cooked rice, a few fresh ingredients and a couple of minutes. It also makes a great breakfast when you’re hungover!

How to make it
- Heat 1 tablespoon of oil in a wok over high heat.
- Swirl the wok around to coat the sides with a thin layer of oil.
- Add the eggs and push them onto the hot sides of the wok with a spatula.
- Cook for 1 minute, until the eggs begin to set around the edges.
- Fold the eggs towards the centre.
- Repeat this a few times until the eggs have just set.
- Transfer to a plate.
- Wipe the wok clean and add another 1 tablespoon of oil.
- Swirl the wok around again to coat the sides with a thin layer of oil.
- Stir-fry the onion for 2–3 minutes until golden.
- Add the rice and stir-fry for another 2–3 minutes, breaking up any larger clumps of rice.
- Stir in the bean sprouts and cook for 1 minute until tender.
- Pour the soy sauce and sesame oil into the wok and stir-fry until they have been absorbed by the rice.
- Stir in the eggs and coriander.
- Transfer to a plate and serve.
