Recipe: warm feta with roasted vegetables and pecans (Keto!)

‘Keto’ has become a popular term, but there is a lot of confusion about it. What exactly does keto stand for? With her new book, Pascale Naessens hopes to provide insight into what a ketogenic diet is and how it differs from her way of eating, which is more ‘moderately low-carb’. Only in this way can you decide whether or not it is something for you. After all, a ketogenic diet is restrictive and fairly extreme: extremely few carbohydrates and extremely high amounts of fat. She wrote the book together with 2 experts.

How to make the warm feta with roasted vegetables
- Preheat the oven to 200 °C.
- Cut the feta in half, place the pieces in an ovenproof dish and bake for 10 minutes, or until the corners of the feta begin to colour slightly.
- Cut the broccoli into florets, the spring onion into fine rings and the bell pepper into cubes. Sauté the vegetables in the olive oil. Add your favourite olives; it does not matter whether they are green or black, as long as you like them. Season with black pepper and salt.
- Coarsely chop the nuts.
- Place a slice of feta on each plate and arrange the vegetables alongside it. Finish with the nuts.
