How to make the Zeeland oysters

  • Open the oysters and collect the juice.
  • Heat the honey until it becomes a light brown caramel, deglaze with the lime juice, then add the oyster juice and all the other ingredients.
  • Let the margarita cool, then serve it on the oysters.
  • You can serve a glass of tequila with them, but beer works too. A nice stout, for example, such as Guinness, Kerel Stout, Maximus Diesel 6 or O’Hara’s Irish Stout. Also excellent: Timmermans Lambicus Blanche, a blend of wheat beer and lambic (spontaneous fermentation).
