Restaurant Omber: delicious food in Amsterdam’s oldest hotel

In the capital’s oldest hotel, Tivoli Doelen, you’ll find a wonderful restaurant: Omber. One of my personal discoveries of 2023. After a return visit, we’re just as enthusiastic. You’ll enjoy beautiful dishes inspired by Rembrandt’s work, plus a bonus: the most delicious chocolate mousse of your life. Omber truly is a hidden gem you’ll want to know about.

Omber: a striking name
Rembrandt plays an important role in the restaurant. And that starts with the name. Omber refers to the characteristic brown found in the famous painter’s work. And a fun detail: Rembrandt once lived next to the beautiful building that houses Omber. A life-size replica of The Night Watch even hangs in one of the rooms, a tribute to the famous neighbor.
Art on your plate
Omber’s Rembrandt-inspired menu changes every six months. Created by executive chef Sergio Borrego Gomez, the dishes are not only incredibly delicious, but also genuinely bring to mind a colorful palette of the Great Painter. The descriptions of the dishes on the menu are far from ordinary, too. How about ‘Omber Colour Study’—preserved vegetables from the Netherlands with an insanely delicious tomato sauce—and ‘The Painter’s Palette’? Another wonderfully delicious dish featuring red mullet and a shrimp reduction.
Menu and à la carte
Both dishes are served as part of the so-called ‘Masterpiece menu’. This menu (consisting of 5 dishes) costs ninety euros per person, optionally extended with a wine pairing. Other menu options are also available, starting at sixty-five euros. Dining à la carte is of course also possible.

Beautiful location
Alongside the delicious dishes, the location is fantastic too. In the middle of the bustling city center, you step into an oasis of calm here. The restaurant is intimate, the service outstanding, and the tables overlooking the water are especially popular. You can understand that the connection with Rembrandt attracts tourists, but locals have also discovered Omber by now.

Kale stamppot
The connection with Rembrandt is also present in our good old stamppot. ‘The Bride’s Rib Eye’ consists of dry-aged rib eye from the Netherlands with an incredible demi-glace (in other words: the gravy of your dreams), an elegant stamppot and a fried kale leaf. Dutch cuisine at its best, if you ask me. Prefer fish? The squid with bisque is also highly recommended.

The highlight of the evening is the dessert ‘Shades of Cacao’: a chocolate mousse with a brownie center shaped like a cocoa bean. Incredibly delicious!

Opening hours and accessibility of Omber
The restaurant is conveniently located near Amsterdam Central Station. Metro and tram stations at Rokin are just 350 meters from the hotel. Coming by public transport is highly recommended. If you’re traveling by car—by now, Amsterdam’s version of hell—Q-Park Waterlooplein is the closest option.
