Restaurant Simple. in Utrecht

A classic in a new guise. That’s Simple. in Utrecht. After top restaurant Podium, run by chef Leon Maizarac, closed, Simple. moved from Lange Nieuwstraat to the impressive building beneath the Dom Tower.

Upon entering, we’re surprised by the warm, modern interior. The large round tables have been replaced by cozy, private spots. We start with bubbles at the bar and move to our table overlooking the courtyard. Owner Ditmar Zuiderhoek, also known for Het Ketelhuis, tells us what to expect this evening: seven courses with matching glasses of wine. We’re not difficult and are happy to be surprised.

What follows is an evening full of beautiful, delicious and special dishes. A few highlights? Snow crab with yacon, vanilla and kohlrabi. Dutch asparagus with oxtail, morels and charred potato skin. Salsify with coconut, aubergine and smoked almond. The wines pair seamlessly with the dishes. Until we reach dessert.
Beer and strawberries
The gariguette (early) strawberry with basil, yoghurt and twelve-year-old balsamic vinegar is served not with wine but with a specialty beer. Ditmar says we should taste all the elements on the plate at the same time, followed by a sip of beer. We’re immediately won over: the beer adds a lovely freshness and depth to the dessert.
After a culinary programme lasting the entire evening, we roll out of the restaurant. We know Michelin-starred establishments that do less well than Simple. Special things happen here. Fortunately, in an accessible way, with informal service in a relaxed atmosphere. That’s how we like it. Oh, and the menu changes regularly, so there’s always a good excuse to return to Simple. We’ve already planned our next visit, at least.
