Roberto’s grilled radicchio

Radicchio, or radicchio rosso, is related to chicory. The ideal side dish for Sunday lunch.

Mix the oil, balsamic vinegar and sugar. Season with salt and pepper.aste each radicchio half with this mixture and leave to marinate for 15 minutes.

Grill the radicchio on the highest setting until it is slightly charred and caramelised. Serve immediately or let the radicchio cool and serve it as a salad.
