Sergio Herman finally back in the kitchen himself

Sergio Herman is working on a new restaurant in Zeeland, where he will be cooking himself. He is tired of being only an entrepreneur and wants to start cooking again in the place he comes from, near Cadzand.

Sergio continues to open businesses: at the end of 2019, he will open a new Air Republic location in Antwerp, and Zaventem Airport will get a Frites Atelier. At the end of 2020, he will open a restaurant in Cadzand, so that he can once again do what he loves most: cook himself.
Passion
”I have become an entrepreneur and am very often in tedious, uninteresting management meetings, but at the end of 2020 – beginning of 2021 I want my own place again, near Cadzand, where I can cook myself,” Sergio Herman explains during the opening of the new Frites Atelier in Brussels. ”It will be for a very small group of people, highly selective. Ultimately, I am happiest when I cook. Yesterday I prepared a langoustine dish for Pure C and I cut my hand, and I enjoyed that. That I had finally cut my hand again. It did me good, because it gave me the feeling I used to have. You know, cooking is what I love doing most.”
Restaurants
Sergio already has three businesses in Cadzand: Pure C**, Air Republic* and Blueness. In June 2016, Sergio Herman opened his first Frites Atelier. In the meantime, seven Frites Atelier locations have opened. The largest location opened last week in Brussels. And securing a table at his Antwerp restaurant The Jane is still one of the most difficult tasks ever, although he does not cook there himself. Nick Bril does the hard work there.
