Sicilian orange salad

The food on the southern Italian island of Sicily features a beautiful mix of Arab, Italian, Spanish and even French and Greek influences. And that makes this fusion cuisine very exciting. One such mixed dish is blood orange salad.

No blood oranges at home? Navel oranges work too.

Preparation

Halve the oranges. Use a sharp knife to cut segments from the halves. Remove the membranes. Cut the red onion into thin rings. Halve the olives. Arrange everything on a platter. Drizzle a generous splash of spicy olive oil over it. Grind black pepper over it.

Delicious with Sicilian pasta with sardines and fennel. You can also add thin strips of fennel to the salad.
