Simply delicious: mozzarella with peach and ham

Mozzarella Peach Salad

Provençal cuisine is one of the most popular regional cuisines in France. Provence produces wonderful products thanks to its location and favorable climate; products from the land and the sea. You can also taste influences from Italy and North Africa in the typical dishes of Provence. In the beautiful book Provence, Alex Jackson explains how to make a delicious mozzarella salad.

“This is more of a composition than a recipe – it is summer cooking at its simplest. Since the success of this dish depends on the quality of the ingredients, you have to wait until the peaches are perfectly ripe and sweet. I prefer buffalo mozzarella from Campania—the fresher the better—but this would also be delicious with fresh ricotta. You can also use nectarines instead of peaches.”

How to make mozzarella with peach and ham

  • Tear the mozzarella into pieces with your hands and spread over a large plate or serving platter.
  • Halve and stone the peaches, then cut each peach into six wedges or thick slices. Lightly drizzle the peaches with some olive oil and just enough lemon juice to balance their sweetness. Season with salt and black pepper.
  • Gently mix the basil with the dressed peaches and arrange alongside the mozzarella. Drizzle the cheese with your best olive oil. Finally, drape the ham beautifully over the top.
