How to make ham and cheese oliebollen
- Stir the Oliebollen mix with the water until you have a smooth batter.
- Add the pieces of raw ham and the grated cheese to the batter.
- Cover everything with a damp cloth or plastic bag and leave it to rise in a warm place for approximately 45 minutes.
- Do not stir the batter again while it is rising.
- Heat the frying oil in a deep fryer or deep pan to 190°C (the oil will give off a white vapor).
- Use 2 oil-dipped spoons or an ice cream scoop to form mounds of batter and let them slide into the oil.
- Fry the ham and cheese oliebollen for approximately 3 minutes until golden brown and cooked through. Turn them halfway through with a fork.
- Remove them from the oil with a slotted spoon and let them drain in a colander lined with kitchen paper.
- Mix the onion powder with the celery salt and sprinkle it over the oliebollen.
Tip: if you don’t have a deep fryer at home or want to take the healthier route, you can also bake the oliebollen in the oven. Then they become oviebollen—yes, really!
