Special dinner by Lowlander: eat and drink your Christmas tree with four top chefs (including Joris Bijdendijk from RIJKS)
Want to get into the Christmas spirit early? Then you really want to be at this dinner: Lowlander is organizing a special dinner with the Christmas tree as its main ingredient. You won’t get a more Christmassy dinner than this.
Lowlander Botanical Beers is known for its naturally delicious beers, brewed with herbs, spices and fresh fruit, or botanicals. Each botanically brewed beer has a unique story and distinctive flavor, such as the Winter IPA, brewed with… recycled Christmas trees!
From bonfire to culinary adventure
Did you know that Dutch people bring around 2.5 million real Christmas trees into their homes every year? A large proportion of them end up on the street, in the shredder or on a bonfire after the New Year? Chief Botanical Officer Frederik Kampman of Lowlander thought there had to be another way: “Botanicals literally come from nature, but the botanicals that are valuable to us are often also a waste or residual stream; what is ‘waste’ to one person is full of ‘taste’ for Lowlander!”
And so, several years ago, the idea arose to make a Winter I.P.A. from spruce needles, and it became a great success. And now you can not only drink your Christmas tree, but eat it too! Some of the Christmas trees that would normally end up on the street corner can now be found in your glass and on your plate.
Eat your Christmas tree
Top chefs Joris Bijdendijk (RIJKS), Samuel Levie (Brandt & Levie, Food Cabinet), Rudolf Brand (CIRCL) and René van der Weijden (Hemel & Aarde) will join forces with the team at Bar Bistro Bureau to create a one-off menu featuring the Christmas tree as its main ingredient.

On Saturday, December 11, the chefs’ dishes will be served as an exclusive five-course menu at Bar Bistro Bureau in Amsterdam. A place costs 75 euros, including a beer pairing and a beertail beforehand. After the unique dinner, the tables will be pushed aside and you can dance until midnight to the DJ’s tunes.
