Are vegetables always an afterthought for you, but never the star of the meal? Then it’s high time you got the book Superveg by Celia Brooks.

Celia has had a vegetable garden for twelve years, where she grows her own vegetables. You can tell. In her book Superveg, she highlights the power of different types of vegetables, as well as how versatile and delicious they are. The most important thing is: enjoy.

The book focuses on 25 different vegetables. Each chapter begins with an explanation of the vegetable’s nutritional value, why the vegetable is a superveg and which nutrients it contains. This means you always have a guide to hand for a healthy, but above all delicious, dinner.

Simple enjoyment

For every vegetable, Celia provides several preparation options, so you can always choose whatever you’re in the mood for. You can eat carrots raw, in a carrot salad with orange and tahini dressing, for example, but you can also bake or confit them. Add fennel to a salad—with apple, for example—or glaze it, cook it in the oven and cover it with a walnut crust. Each dish includes great variation tips, so you can take it in any direction.

A tribute to vegetables

The book celebrates the simplicity and versatility of vegetables. With the recipes it contains, you can create dishes that look as though you’ve spent hours in the kitchen. The vegetables receive so much love and attention that you’ll no longer see them as ‘the healthy part of your meal’. From now on, when you walk past the produce section of the supermarket, you’ll know immediately what you’re going to cook. Or bake. Or grill.
