Surinamese bami with marinated chicken by star chef Soenil Bahadoer

During the coronavirus crisis, star chef Soenil Bahadoer decided to drive around the country with his Spicy Chef food truck, serving the very best Surinamese street food. In his new book Streetfood, Soenil shares the recipes for the most popular dishes and snacks from his food truck, including this Surinamese bami with marinated chicken.

Soenil: “My sister Rekha regularly made this bami for our team at the restaurant. Whenever she arrived with trays of chicken and bami, it was a celebration. It was a real bestseller in our food truck. The containers of bami with chicken flew off the counter.”
How to make Surinamese bami with marinated chicken
- Cook the bami according to the instructions on the package.
- Heat a splash of oil in a wok and sauté the onion, garlic, ginger, galangal and Madame Jeanette pepper. Add the kentjoer powder, allspice berries and salam leaves and mix everything well.
- Stir in the cooked bami and deglaze with the soy sauce, ketjap and Surinamese ketjap. Season with a little salt if necessary.
- Heat some oil in a pan and sauté the onion, garlic and pepper. Add the masala, black pepper and allspice powder, then deglaze with the poultry stock, ketjap and soy sauce. Season the marinade further with some pepper and salt.
- Place the drumsticks in the sauce in an oven dish and cover before placing in the refrigerator. Leave to marinate for at least 8 hours, but preferably overnight.
- Bake the chicken for 45 minutes in a preheated oven at 200 °C.
