Taste test: bright orange bitterbal

On King’s Day, we drink beer, and bitterballen go with that beer. Of course, we eat the classic filled with meat ragout, but with a bit of luck, this year we will also get to taste a bright orange royal variant made with pumpkin.

The creator of the orange bitterbal is chef Eric Swaghoven of Valuas, the Michelin-starred restaurant in Venlo. He comes up with new variants more often, because the restaurant has a croquette bar. This time, the chef experimented with old Dutch spices. The result: the King’s Day bitterbal with a bright orange coating, filled with pumpkin, ginger, coriander, white pepper and orange. It is on the menu at the restaurant’s brasserie, but is also available for purchase by the hospitality industry. Would it be tasty? In any case, we want to try it.
