The Amsterdam kapsalon?

After a chocolate-covered chip snack and red velvet fries, Frietboutique has come up with something new again. This time it’s not sweet, but Amsterdam-inspired.

Fries pickled in Kesbeke brine, served with ossenworst, sambal mustard and pickled red onion. Created by none other than chefs Andrès Delpeut and Pascal Duvivier of Michelin-starred restaurant Bridges.

They call it a ‘star fry’, but the comparison with Rotterdam’s classic snack-bar dish, the kapsalon, is quickly made: fries, meat, sauce and a fresh counterpart. Is this Kesbeke potato-and-ossenworst combo Amsterdam’s answer to the Rotterdam kapsalon?

We’re still undecided. Fries and ossenworst have the same chewy texture, and besides, we wonder whether the raw ossenworst might not secretly cook because of the hot fries. But hey: there’s no harm in trying. In Rotterdam too, for that matter, because this fries dish (€6.50) can be sampled through 8 October at Bridges Bar Bistro, Frietboutique Amsterdam and Frietboutique Rotterdam.
