Laughing: ‘As a Dutch boy in the kitchen, it took some getting used to at first; I was completely unfamiliar with so many herbs and spices. But together with his mother, Soenil taught me everything. You can only learn to cook with spices and work with Surinamese influences as well as I did from him—and at the highest level, too. Besides, we can also talk about everything outside of cooking.’
Much more than a right-hand man
Soenil: ‘Gijs is truly a top guy; he has been with me since the very first year and is not only a good chef, but also very honest and loyal. Gijs is much more than my right-hand man. I often call him my son, and that is not without reason. I took him under my wing from a young age and treated him as if he were my son.’
‘Besides the culinary work we do here, we also try to grow as people. Being kind to the outside world and respecting other people; that is at least as important as being able to cook well. I may not be his biological father, but he feels like a son to me. That he surprises me with such a beautiful whisky and, on top of that, with such a message on it means a great deal to me.’
