Where do you go to eat when money is no object and time doesn’t matter? Every month, we ask chefs, bartenders, culinary journalists and other food lovers this question. This month: the dream day of David (25), a waiter at Choux.

Dream day
“My day starts with breakfast at Oslo in Amsterdam. In the morning, the sun shines beautifully onto the terrace there, and they serve delicious sandwiches. What do I preferably eat? Anything as long as it involves eggs. Eggs Benedict, eggs royale or simply delicious poached eggs. A cheese sandwich makes me miserable. And I’d like a newspaper with it, please”.

Off to Norway
“After that, I get on a plane to Norway with five of my best friends. We’re going fishing and hunting there. After the hunt, we warm up in the sauna and build a big fire for the log cabin. Everything we catch—salmon, deer, wild boar—is cooked on a spit over a large fire in front of a wooden log cabin. Once everything is gone, we take the plane back to Amsterdam, tired but satisfied”.

“I’ll skip the drinks; I’ll have wine during dinner at Gebr. Hartering. I only know the restaurant by name, but what appeals to me is the nose-to-tail cooking. That requires a lot of creativity. It looks not pretentious at all. I actually never choose what I eat, but I’m happy to be surprised and go for the full package. So tonight, my friends and I will enjoy nine courses with matching wines. I hope one of those courses is côte de boeuf, a beautiful rib steak with marrow. After enjoying cheeses and something sweet, we’ll head to Berlin”.

Dancing
“Berlin is the only city where I feel at home right away. The nightlife is vibrant, there are so many great little places to eat and it’s a city with a raw history. The atmosphere in Berlin is special. With all my friends, I dance the night away at Berghhain. I don’t know what time it will be, but today was beautiful”.
