The solution to food waste

Not selling out is every food truck owner’s nightmare and, of course, a terrible waste of food.

Have you ever, as the owner of a food truck, had a mountain of hamburgers, nachos or crêpes left after a day at a festival? It can happen—sometimes you sell less than expected during an event. Change, disposable tableware, napkins, staff—you can arrange and estimate almost everything as a food entrepreneur in advance. But what you have hardly any influence over is the number of visitors.

What hurts even more is when the food ends up in the rubbish bin or on the compost heap. Fortunately, that is now a thing of the past—at least for food entrepreneurs in Amsterdam. Serdar Tonkas, owner of the TonTon Club in Amsterdam, wanted to do something about that waste. He came up with ‘Leftovers’.

Leftovers

With Leftovers, Tonkas is offering space at the site next to the TonTon Club (Westergasterrein) for ten food trucks that have not sold all their food over the weekend. This gives Leftovers an additional sales opportunity. The great thing is that truck owners do not have to pay a site fee, nor do they have to hand over a share of the money earned. But, much more importantly, far less food is wasted. They will launch the concept on 6 June.
