Winnaar Noah Wynants & Mentor Nelson Tanate

There’s a big celebration at De Librije***. Last night, Jonnie and Thérèse Boer of De Librije took second place in the new Lekker500, while on another stage, De Librije’s senior sous chef Noah Wynants won the title of ‘Best Young Chef of Northern Europe’.

Noah (26) received the title during the S.Pellegrino Young Chef Academy Competition 2024/2025.

S.Pellegrino Young Chef Academy

The S.Pellegrino Young Chef Academy is an international initiative that challenges culinary talents to explore the boundaries of gastronomy. The participating chefs — all aged 30 or under — each develop their own signature dish with which they present their culinary vision on a single plate. From more than 1,000 submitted dishes, the S.Pellegrino Young Chef Academy Competition selected the most promising recipes.

Yesterday, ten young chefs faced off in an exciting battle at the Miele Experience Center in Vianen in the Northern European finals of the global competition for chefs under thirty. Noah emerged as the overall winner.

Noah Wynants: from intern to senior sous chef

Noah was just 17 when he walked into the kitchen of De Librije as an intern. There, he worked his way up to senior sous chef alongside Jonnie Boer and Nelson Tanate. During the S.Pellegrino Young Chef Academy Competition, he showed what is possible with Dutch produce through a plant-based dish. His Dutch ‘Rendang’ is a refined rendang made with aubergine and shiitake mushrooms. Noah used unexpected local ingredients, such as hazelnuts and passion fruit.

Extra special: in addition to the overall title, Noah also took home two of the three thematic awards. The Acqua Panna Connection in Gastronomy Award and the Fine Dining Lovers Food for Thought Award also went to him.

At the end of 2025, Wynants will cook in the global final in Milan for the title of ‘World’s Best Young Chef’.
