This is the definitive list of 2016

On 21 November, it was announced during an incredible dinner at BAUT & Dreesmann who the 100 tastemakers, shakers and movers are. Number 1? That spot goes to the founders of Foodhallen Amsterdam: Tsibo Lin, Chong Chu, Zing-Kyn Cheung and Rakish Gangapersad.

These four friends, with backgrounds in the hospitality industry and business, were inspired by the food markets in Barcelona, Copenhagen and Madrid. The first indoor food market in the Netherlands, in the former tram depot in Amsterdam-West, is here to stay, as is evident two years after its launch. With the recent launch of new original food outlets, the initiators keep the food offering fresh and surprising. We now see food courts appearing everywhere in the Netherlands. Not only in Amsterdam, but also in Deventer, Eindhoven and The Hague. In other cities, initiatives are underway from parties inspired by Amsterdam’s Foodhallen.
The dinner
First, drinks were enjoyed with the All that Jasmin cocktail by Bartender of the Year 2016 Kevin Kroon, shrimp bitterballen from Patisserie Holtkamp and the bieterbal by Jonathan Karpathios (Vork & Mes).
The amuse-bouche – kohlrabi-leaf tempura – was prepared by Joris Bijdendijk (RIJKS®). The first intermediate course, an oyster ceviche, came from Guillaume de Beer and Freek van Noortwijk (BREDA), while Jonathan Karpathios prepared the second intermediate course: caramelized onion with potato-messenklever cream and black olive. This was followed by pork belly with langoustine by Marnix Benschop (creative chef) and veal tongue with pointed cabbage by Michiel van der Eerde (BAUT & Dreesmann).
The main course, Lièvre à la royale (royal hare), came from Giel Kaagman (Kaagman & Kortekaas). The finale of chocolate, salted caramel and vanilla was prepared by Ruben jan Adriaan (Macaron by RJA).
