The cows belonging to Frenchman Alexandre Polmard aren’t quite cuddled yet, but people do talk to them every day. The result? Utterly relaxed cows that produce the most expensive meat in the world.

The ribeyes and côte de boeufs from these calm animals are sold at the Polmard boucherie in the Parisian district of St. Germain, run by Alexandre Polmard. Polmard is the sixth generation of this family of butchers. But talking isn’t the only thing the Frenchman does.

In a refrigerated room where the temperature is 43 degrees below zero, cool air is blown over the meat. This allows the meat to be aged for 28 to 56 days without its quality deteriorating. The most expensive piece of meat costs 3,000 euros and comes from the year 2000.
