This is the secret ingredient for the freshest chicken soup

kippensoep

Chicken soup isn’t just delicious; did you know that chicken soup can also help with fever and the flu? It’s salty (so it has hydrating properties), is packed with vitamins and also contains carbohydrates. It gets even tastier when you add this one ingredient.

Whatever recipe you follow for chicken soup, make sure you always add a little lemon.

Not just delicious because of its freshness

Naturally, a little lemon gives your soup a fresher flavor, but that’s not its only benefit. Its acidity also goes very well with the vermicelli and chicken (especially if you have larger pieces in it, adding some acidity can work really well), but that’s not the greatest benefit of adding a little lemon to your soup.

The acidity also ensures that all the flavors are better balanced. Besides adding freshness and the lemon’s own flavor working very well in a cup of chicken soup, it also allows the other flavors and spices to shine through better without becoming overpowering. Incidentally, this isn’t only true for chicken soup; adding some acidity is also great for balancing the flavors of, for example, spareribs.

Lemon juice or zest

I personally use the juice of half a lemon (per 4 servings), so not much at all. What I do recommend is grating some lemon zest over it before serving. And again, it doesn’t matter which chicken soup recipe you follow — I always add this and it always works.
