This is the secret to making your pancakes extra fluffy

pancakes

I regularly skip breakfast, but when I do have breakfast, I make it count. So no ready-made banana pancakes from Albert Heijn in the microwave. No, I make the tastiest pancakes myself, because they’re so much more delicious and airy — especially when you follow this secret to make your pancakes extra fluffy.

I love pancakes that are as fluffy as possible, and the good news is: making your pancakes extra fluffy isn’t difficult. You just have to do one simple thing.

It’s all in the eggs

It’s all about the eggs! To be more precise: separating the eggs. When you make your pancakes, keep the egg yolk and egg white separate. You can add the egg yolk straight to the other ingredients, but beat the egg white separately for about three minutes. It will turn into a light, thickish white mixture that you can add to the rest of the ingredients.

Extra fluffy, there you go

And that’s it: it’s that simple. And yes, this works with every pancake recipe. I often make really simple pancakes with just one banana, oats, baking powder and a little Greek yogurt. I use two eggs for those, and when I beat the egg whites separately, they become so much fluffier.

As far as I’m concerned, this is a top food hack, especially because the banana can make them quite heavy. Believe me, once you’ve tried this, you won’t want to do it any other way.
