That is, of course, ‘Paella Valenciana’, an incredible rice dish with fish, shellfish, chicken and rabbit. But our tip: try the version with rabbit, green beans and snails (you order ‘paella de arroz con conejo y caracoles’). This meat paella is epic. At the weekend, it’s advisable to make a reservation, because it’s always packed here.
