Turkish dürüm

Dürüm is a thin pancake made from unleavened bread dough that you fill with whatever you like, such as raw vegetables and meat.

Method
First prepare the dough. In a small bowl, mix the flour with 90 ml lukewarm water and a pinch of salt. Knead the dough well and shape it into a ball. Leave to rest for at least 1 hour (or, even better, overnight). Meanwhile, prepare the filling.
Choose one of the fillings below (lamb, minced meat or chicken). Finely slice the lettuce and finely chop the red onion. After the resting time, roll out the dough on a floured work surface into a circle. Cook the wrap for 30 seconds on each side in a dry, hot frying pan.
Spoon the raw vegetables into the centre of the wrap, top with the filling and fold the wrap closed. Serve warm.
With lamb
Thread the cubes of meat onto skewers (if using wooden skewers, soak them in water first). Grill the skewers on the barbecue or under the oven grill, or fry them in a roasting pan.
With minced meat
Crush the garlic, finely chop the onion and finely chop the parsley.
Mix the minced beef with the lamb shoulder, garlic, onion, parsley and some salt. Knead the meat mixture around skewers (if using wooden skewers, soak them in water first). Grill the skewers on the barbecue or under the oven grill, or fry them in a roasting pan.
With chicken
Cut the chicken into cubes and crush the garlic. Mix the garlic into the sunflower oil and stir in the cumin and a pinch of salt. Marinate the chicken cubes in this mixture. Thread the chicken cubes onto skewers (if using wooden skewers, soak them in water first). Grill the skewers on the barbecue or under the oven grill, or fry them in a roasting pan.
