You can hardly have missed it: the whole world has started baking en masse. Banana bread, to be precise. But if we’re all so obsessed with banana bread, why not do more with it?

Now I hear you thinking: like what? Well, banana toast, for example, or banana bread pudding. Or this ingenious idea from Delish: banana bread waffles. Exactly the same batter as the original (so feel free to use your own banana bread recipe), but baked in a waffle iron. The answer to the croiffle? No idea, but definitely more than worth trying.

How to make banana bread waffles:

  • Preheat your waffle iron and, if necessary, grease it with a little cooking spray.
  • Mix the baking soda, flour and salt together in a large bowl.
  • In another large bowl, mix the melted butter, egg, egg yolk, sour cream and vanilla. Then add the mashed banana and mix until combined (it doesn’t need to be completely smooth).
  • Gradually add the dry ingredients to the wet ingredients until everything is mixed. Finally, ‘fold’ the chocolate chips into the batter.
  • Add a scoop of batter to your waffle iron, close it and bake until golden brown on both sides. Repeat until all your batter is used up.
  • Stack the waffles, pour some maple syrup over them and dig in!
