Where Hidde de Brabander does his grocery shopping

Master pastry chef Hidde de Brabander gets little enjoyment from making a thousand identical macarons. He prefers experimenting with foreign sugars and spices. This is where he gets them.

“I usually get basic ingredients from wholesalers such as Hanos, but I also like going to Wah Nam Hong Cash & Carry in The Hague. I go there for one thing and leave with two full boxes. The same goes for the Tanger Market in Rotterdam.”
“As bakers, we use a lot of flour, sugar and eggs. I enjoy occasionally trying out a few things from other countries. Recently, for example, I took eight different types of Asian sugar home from Wah Nam Hong. There’s nothing wrong with regular granulated sugar, but sometimes a small change can result in a completely different product. I’m not much of a traveller and don’t go on holiday very often. But this way, I still get to discover new products.”
