If you want to conjure up the ultimate crispy roasted potatoes from the oven, you’ll first need to boil them. And to that boiling water, add not only some salt but also a teaspoon of baking soda. Baking soda breaks down the pectin in the potatoes, allowing more of the potatoes’ starch to come to the surface. And it’s precisely that starch that makes them turn deliciously golden brown and crispy in the oven. So give it a try—I did too, and it really works!
