Not another call to crowdfund, say, a new burger joint-slash-nail salon, but an appeal to save perfectly good cabbages (Kraut in German) from destruction. By turning them into your own sauerkraut at Rotterdam’s pop-up Sauerkraut Factory.

The 2017 cabbage harvest was so large that there is now a surplus. And while there are food shortages elsewhere in the world, we all know what happens to such surpluses in our country. They are destroyed because they do not generate enough revenue at auction.

For that reason, De Rotterdamse Oogstmarkt is organizing The Kraut Fund/Fest on 16 December: to save 405 of the 60,000 kilos of surplus cabbage from organic farmer Krispijn van den Dries (3 pallets) and turn it into sauerkraut at the one-day pop-up Sauerkraut Factory.

Would you like to learn how to make your own sauerkraut that day while also helping to reduce food waste? Then buy one of the 405 cabbages online for €5. You will receive a sauerkraut bucket with an airlock, plus admission to the pop-up Sauerkraut Factory on 16 December.

Learn to make your own signature Kraut

That day, during the Kraut Fund/Fest at the fortnightly Rotterdamse Oogstmarkt, fermentation expert Sanne Zwart (no. 92 in the FavorFlav Top 100) will guide you in making your own signature Kraut, tonnemoes or choucroute.

You can take part of your creation home with you right away; the rest will be served six weeks later during KrautFest: a debate and dinner about food waste centered around this Rotterdam Kraut.

Not interested in learning how to ferment, but still want to do something about food waste? Donate your Kraut to Groenten zonder Grenzen, a volunteer initiative fighting food waste that prepares a free feast from products that would otherwise be thrown away.
