Pop-up risotteria with a Michelin star

Two Italian brothers will soon be preparing their ultimate risotto at the Netherlands’ first pop-up risotteria.

The men behind the pans are Manuel and Christian Costardi, also known as the Costardi Brothers. In Vercelli (near Turin), in the Piedmont region, they run a family hotel and restaurant. Piedmont is known for risotto: almost half of Italy’s risotto rice production comes from here, and throughout the region you’ll find risotterias – restaurants specialising in risotto. The locally renowned restaurant has held a Michelin star for more than ten years.

Ode to risotto

At the pop-up, the brothers, who are coming to the Netherlands at Peroni’s invitation, will pay tribute to risotto. Like pizza and pasta, risotto is one of the most iconic dishes in Italian cuisine. A deceptively simple dish, but one with many pitfalls when it comes to making it truly perfect. How do you get risotto exactly al dente? What is the best risotto rice? Which flavourings pair well with it?
