7 Ultimate Autumn Pastas

Now that autumn has truly arrived, there’s nothing better to warm up with than a big bowl of pasta. Whether it’s a quick meal after a busy day or a sauce you let simmer for hours at the weekend. If you’re ready for a break from the standard carbonara and bolognese, make one of these extra autumnal pastas.

Creamy mushrooms
When you think of mushrooms, you think of autumn. This creamy pasta is ready in no time, making it the perfect weeknight meal. Do make sure you brown the mushrooms properly; they can get quite dark—that’s when they’re at their most delicious.
Pumpkin lasagna
Don’t like mushrooms? Then pumpkin is the autumn ingredient to reach for. In this recipe, you slice the pumpkin into very thin slices, about as thin as the pasta sheets. This gives you a baking dish full of layers, naturally with a crispy, cheesy top. Heaven!
Brussels sprouts and sausage
You love it or you hate it, but I can’t get enough of them: Brussels sprouts. Especially when you combine them with two other favorites: sausage and crispy breadcrumbs! Pumpkin and kale
A kind of bolognese, but with pumpkin purée stirred into the sauce, making it wonderfully creamy. In America, you can buy pumpkin purée everywhere. A luxury we (not yet) have in the Netherlands, but fortunately it’s also not difficult to make it yourself.
Mushrooms, sage and egg
You make this pasta somewhat like a carbonara. You mix the cooked pasta with a mixture of egg and Parmesan, which cooks in the heat of the pasta and creates a silky smooth sauce. Add some fried mushrooms and sage, and you have an amazingly autumnal pasta.
Buttery tomato sauce
This tomato sauce gets an extra-deep flavor because you roast the tomatoes with butter. This pasta is best eaten from a bowl on the sofa while watching a good (or bad) movie. With lots of extra Parmesan, of course.
Pumpkin ravioli with walnut sauce
