7 Veggie Recipes

Want to skip meat and fish today, but have no veggie inspiration? No stress, we’ve lined up seven recipes for you.

Cauliflower with peas, almonds and lemon
With its creamy cauliflower purée, crisp sweet peas and crunchy almonds, even the biggest carnivores will be left speechless. An added bonus: this main course is on the table within half an hour.

Blood orange and burrata salad
A recipe in which burrata plays the leading role is interesting from the get-go. And when we also find the words ‘blood orange’, ‘Swiss chard’ and ‘freekeh’ in the recipe, we’re practically running to the kitchen. This summery salad has everything that makes our hearts beat faster.

Grilled butter lettuce with sauerkraut sauce
This recipe comes from Benny Blisto, a renowned vegetable chef who cooks up a storm in the kitchen of restaurant BAK in Amsterdam.

Polenta fries with capers and parsley mayonnaise
With a bag of these fries on our laps, you won’t hear a peep out of us. Also delicious with tarragon or basil mayo.

Greek falafel with tzatziki
A classic of vegetarian cuisine. This version includes courgette. Serve the falafel with a generous dollop of homemade tzatziki on flatbread. Add a little lemon and coriander, and leave it at that.

Cannelloni from Sorrento
The Silver Spoon series was recently expanded with a book full of recipes from Naples. This cannelloni recipe is one of the gems from that book. If you really want to treat yourself and your friends, go for fior di latte mozzarella and make your own pasta dough. No time or inclination? Other mozzarella and dried cannelloni will do the job (but they are less delicious).

Cacio e pepe
Possibly the simplest dish ever. Pasta with pecorino and black pepper. On the table in no time and absolutely delicious.
