Apple crumble with blackberries

In Eat Happy, the new cookbook by Melissa Hemsley, you’ll find this apple crumble with quinoa instead of rolled oats. She considers it a delicious alternative. We’re happy to believe her.

Melissa: ‘A crumble is such a versatile dish: you can replace the fruit and nuts in the crumb topping with other varieties; pecans are a delicious alternative.’
1. Preheat the oven to 220 °C.
2. Halve the apples, remove the cores and cut them into 2 cm cubes. Place the apple cubes in an ovenproof dish, mix in the cinnamon and maple syrup, and bake them in the oven for 12 minutes (stir them halfway through the cooking time0 until the apples begin to soften. Remove them from the oven.
3. Meanwhile, make the crumb topping. In a medium-sized bowl, mix the quinoa flakes with the walnuts, cinnamon and salt. Rub in the butter and maple syrup with your fingertips until it forms a crumbly mixture.
4. Press the blackberries between the soft apple pieces from the oven and cover the fruit with the crumb mixture. Sprinkle with nuts or seeds and place the dish in the oven for 12–15 minutes, until the crumb topping is golden brown.

Use it all up
Melissa: ‘This is a delicious way to empty all the small bags of leftover nuts and seeds or kernels that have been sitting in the pantry for too long. Simply sprinkle them over the crumble before baking for an even crispier result.’
