Method

Soak the bread in the milk for 3 minutes and then leave it to drain. In another bowl, mix the ground meat with the meat from the sausages, the eggs, the drained bread, some of the finely chopped chives and the parsley. Season with salt and pepper.

Spread the flour over a plate. With wet hands, shape the meat mixture into walnut-sized balls and roll them through the flour. Heat the oil and butter over medium heat in a frying pan, add the meatballs and fry them until golden brown, about 10 minutes. Make sure the meatballs do not fall apart; shake the frying pan regularly so that the meatballs roll through the butter and oil and brown on all sides. Do this in batches if necessary. Remove the meatballs from the pan and set aside.

Put the finely chopped onions in the same frying pan, pour in the beer little by little and let it evaporate. Add the tomato purée and thyme and season with salt and pepper. Simmer for 15 minutes, then add the meatballs to the sauce and simmer for another 20 minutes.

Sprinkle with the remaining chives and serve.
