Oriental salad with duck breast

You may have seen in our livestream that FavorFlav recently received a very special guest: none other than Martin Senders, a.k.a. The Philips Chef. He showed us everything you can do with the Philips Airfryer. And guess what? It’s about much more than just frying. Grilling, baking, roasting: you name it. For example, try this oriental salad with the most tender duck breast fillet.

Method

1       Preheat the Airfryer to 200°C in about 5 minutes. For the croutons, cut the slice of bread into cubes of about 1 cm and remove the crust. Bake the croutons together with the cashew nuts in the Airfryer for about 8 minutes until golden brown and crisp.

2       For the duck breast, preheat the Airfryer to 200°C again if it has cooled down. Score the skin of the duck breast diagonally and bake the fillets skin-side up in the Airfryer for about 9 minutes. Turn off the Airfryer and let the duck breast fillets rest for about 5 minutes with the drawer slightly ajar. Season with salt and pepper.

3       For the marinade, mix the garlic, red chili pepper, lime juice, sugar, sesame oil, lemongrass and ginger. Remove the stems from the cherry tomatoes and halve them. Divide the marinade over the onion and tomatoes and set aside.

4       Slice the cucumber. Cut the duck breast fillets into slices and serve with the mixed salad leaves, tomatoes, onion, cucumber and crispy croutons. Sprinkle with the coriander and serve immediately.
