Roasted Truffle Nut Zucchinis

To warm you up a little in these wintry temperatures: Jord Althuizen shares hearty recipes from his book Smokey Goodness Winter BBQ—a touch sweet but above all richly seasoned. That certainly warms us up.

Who says you can’t barbecue in winter? Jord proves otherwise with the robust dishes in his new cookbook. In four steps, you can serve these stuffed truffle nut zucchinis. Even meat lovers will warm to them.
Method
1. Prepare a barbecue with a lid for indirect grilling and heat it to 180 °C.
2. Meanwhile, make the filling by whisking the egg with the cream, then add the remaining ingredients and mix everything well.
3. Carefully cut the top off each zucchini, leaving the stem attached. Scoop out the zucchinis with a spoon, leaving a wall approximately 1 cm thick.
4. Spoon the filling into the zucchinis and put the tops back on. Place the stuffed zucchinis on the BBQ and grill them with the lid closed for approximately 30 minutes, until the zucchinis have softened and the filling is firm.
